Quick Breakfast Sandwich

Quick Breakfast #1: I make these sandwiches in advance. Wrap them in a paper towel and then place them in a zipper style plastic baggie. Freeze them for up to one week. Grab one. remove from plastic, but keep it wrapped in the paper towel. Now, microwave for 1 minute on HIGH power. EAT UP! 

Egg Sandwich S/C value: 1/2

  • One whole, brown organic, cage-free egg (You may scramble the egg or leave it whole).
  • Three teaspoons salted butter
  • One slice of sharp cheddar cheese
  • Two crispy slices of precooked bacon, I use Hormel brand. (Purchase packages of precooked bacon at major grocery store chains).
  • Two slices (one set) of Oroweat 100% whole wheat sandwich rounds
Cooking Supplies:
One small non-stick skillet with a lid/cover
Small bowl
NON-metal spatula
Toaster oven or oven or even a small toaster appliance
Paper plate and paper towels
Microwave oven
One serving plate

Directions:
  1. *On a paper plate lined with one paper towel, place two slices of precooked bacon on top of the paper towel. COVER with another piece of paper towel. Place in the microwave and cook on HIGH power for 15 - 20 seconds.
    *OPTIONAL! Since the bacon is precooked, you do not have to heat in microwave. I like my bacon crispy so this is why I place them in the microwave...to crisp them up.
  2. Pull apart the Oroweat Sandwich round roll. Spread a 1/2 a teaspoon of butter on each side and toast. I like my crispy.
  3. Remove the toast and place on your serving plate. Lay the two slices of bacon then the cheese on the top portion of the toast.
  4. Crack open the egg into the small bowl; set aside. (Option: If you like your egg scrambled, at this point, add a teaspoon of water and whisk with a fork until the egg yolk and egg white is completely mixed).
  5. In a small non-stick skillet, heat on stove top to medium temperature. Add one teaspoon of butter and let it melt and become slightly bubbly. Now, add the egg and cover with the lid. Do not lift the lid for two minutes or longer until the center of the egg is complete cooked. The yolk will become a lighter yellow and the whites will become non-transparent.
    (Scrambled option: Add the butter and wait until slightly bubbly, add the egg, stir around about two times then cover with lid and wait until the egg is done...no need to continue to stir as this makes the egg tough.
  6. When the egg is done, turn off the heat, remove the lid, and grab your non-metal spatula. Position the skillet over the bottom slice of of the toast, tilt the pan slightly, using the NON-metal spatula, guide the egg onto the bottom piece of toast. Place the upper piece of toast, with the cheese and bacon, on top of the egg. EAT UP!
